Strawberry, Spinach, Walnut & Quinoa Salad

The Equinox has just passed, the sun is shining and the weather has changed already. Spring is finally here and I am already feeling happier and more alive. It is incredible how a little sunshine transforms your whole outlook on a day.

Spring also means that my favourite fruit and veg stall has returned. After being disappointed by a punnet of supermarket strawberries over the weekend, I was beyond excited to try my luck on the stall. For a mere Β£1, these juicy and succulent strawberries had spring and summer written all over them, devouring half of the packet before I made it home. It was then that the idea for this quinoa salad appeared in my mind and I had to make it!


Serves 1


1/2 cup of quinoa

a handful of strawberries

a handful of baby spinach

a palmful of walnuts

Balsamic Olive Oil Dressing

Makes about 1 cup
3/4 cup extra-virgin olive oil
1/4 cup balsamic vinegar
a pinch of salt
blackΒ pepper
Begin byΒ adding the dried quinoa to a saucepan with a sprinkle of herbs du province, a cap full of apple cider vinegar and cover with boiling water. Set to simmer for 10-15 minutes until the quinoa doubles in size. Rinse and drain and set aside. Chop up the strawberries, baby spinach and crush the walnuts then placing into a bowl. Mix in the quinoa, season with salt and pepper and drizzle with the balsamic dressing if you wish.
Extra topping ideas!
Add chia seeds and avocado cubes for a fatty punch
Top with toasted pumpkin and sunflower seeds for a nutty boost
